WCNC's Larry Sprinkle interviewed Andy during Valentines 2013 and called this bark 'Sweet with Heat' and he's right. Like any of our spicey products we like a balance between flavor and heat. Peppers by nature have some great flavor properties. An ancho pepper has a wonderful rasin / plum like taste and when combined with blueberries--well it's a great combo. The heat source are serrano peppers so you don't really catch the heat until you start to swallow. It builds a bit, levels off, and you are left with a nice warm buzz.

Now Andy is continuely (jokingly) harassased by the spicer contingient of local chocolate lovers to create an even hotter version. The recipe is still in flux but he's managed to use some Padron peppers to  bump up the heat quite well so the heat / spice is enjoyed on the lips, tounge and through the swallow. It may not be enough for the die-hard-habanaero-swallowers but it is quite a treat if you like the heat. Order accordingly.
