We ‘infuse’ flavor. It’s one of our most common questions we answer. We don’t simply source the oils or extracts of a food. We find the real food, the whole food, and use it during our cream or butter melting phases to pull the flavor, or infuse it, within our product. We also try and source as local as we can. That means for each product we first look at our local markets, or call our farming/gardening friends and if they cannot help us we start taking steps from local to regional, from regional to national. For much of our menu we are able to source local ingredients. It’s another reason we work to stay seasonal, if it’s in season we can usually find it in abundance locally. By going to this length we honor the food. We choose our infusions based on the season, the availability of fresh ingredients, and the creativity of Chef Bill, the family, and the amazing inputs we get from our friends. |

Pure Chocolate is always a choice, it is the core of everything we do. For the purist at heart our simple and smooth chocolate ganache is at the heart of it all.
White Chocolate is like no other. Rich, creamy, with a hint of saltiness makes this truffle stand out as something more than just white chocolate.

Orange
The bright zest of orange peel blends beautifully with
chocolate to create a mellow sensation of blue skies and sunshine
Espresso
Sourcing from Counter Culture Coffee, we crush the Toscano espresso bean gives this truffle an immediate burst of flavor.
Earl Grey Tea
Chocolate and teas go very well together. Earl Grey brings a great black tea quality with a tasty bergamot (citrus) peak. The flavor really lingers well for an enjoyable finish.
Basil
An uncommon blend of one of the most widely used herbs today with the
most widely loved confection, The Chocolate Truffle. Surprisingly
enjoyable, trying the basil has quickly become the most popular way to
first experience the process of infusion. We utilize many local
gardeners for this, Rosemary Pete & Green Monster to name a few.
Jasmine Green Tea
The sweet, aromatic flavor of jasmine comes through this chocolate
truffle with a supporting note of green tea to bring it all together.
Lavender
Through its flavor and aroma, this softly floral truffle will take you for a walk in the garden.
Mint
The classic combination of mint and chocolate leaves you feeling cool and refreshed on a hot summer’s day.
Special Request
With special requests you need to order at least 18 (1oz) or 36 (1/2oz) truffles. While many items can be sourced, some can not due to the seasonality. For example some herbal components like basil and tarragon are not always available during the winter months. Call us to find out more.
Ancho Pepper
A perfect balance of the yummy taste of pepper with a slight kick at the end.
Chai Tea
We start with an organic masala chai tea blend and steep it for a long
time in cream. Extracted are notes of another place—cardamon,
peppercorn, cinnamon, black tea, ginger and more. As the temperature
cools this tea based truffle hits the spot.
Coconut
Smooth, creamy, and full of Coconut goodness. There is no grit or grain, we use a rich coconut milk which gives a lush full body flavor with a great finish.
Tarragon
A distinctive taste and aroma, this herb blends smoothly with chocolate and releases its flavor in waves of enjoyment.
Molasses
Dark and memorable, sweet with a hint of savory, molasses is a beautiful fall flavor and the harvesting of sorghum in our area has allowed us to source quite close to home.
Pink Grapefruit
A fruity burst of flavor that makes your tongue tingle with brightness!
Taste the subtle tart of grapefruit with the sweetness of pink.
Star Anise
Warm and smokey with a kiss of minty-licorice.
Mexican Cinnamon
Known as Canela, this cinnamon has a bit more punch than what you’re used too. Bringing a combination of cinnamon and chocolate where both are recognized but working together to create one joyous taste sensation.
Ginger
A warm teasing flavor with a subtle after bite drawn from this pleasant root.
Peppermint
Thin mints, Andie’s Candies, family peppermint favorites but we never really liked the quality. Now we all can indulge ourselves in some delicious whole-food infused peppermint. It will take you back and keep you coming for more.
Vanilla Bean
Like tasting the mixed ice cream of vanilla and chocolate, these
flavors are made to compliment each other without overpowering their
individual tastes.
Violet
Using organic violet flowers, this truffle is a mouth full of delight!
Hard to put into words, violet has a dark taste to it that works
extremely well in chocolate.
Winter Spice
Warm up with Winter Spice! A beautiful blend of spices that will put you in a warm, happy, place of comfort.
Cranberry-Orange
A taste of the season. Bright citrus with a tangy tart cranberry melds well together with our smooth chocolate ganache.
