We don&amp;#8217;t simply source the oils or extracts of a food.  We find the real food, the whole food, and use it during our cream or butter melting phases to pull the flavor, or infuse it, within our product.&lt;/p&gt;
&lt;p&gt;We also try and source as local as we can.  That means for each product we first look at our local markets, or call our farming/gardening friends and if they cannot help us we start taking steps from local to regional, from regional to national.  For much of our menu we are able to source local ingredients.  It&amp;#8217;s another reason we work to stay seasonal, if it&amp;#8217;s in season we can usually find it in abundance locally.&lt;/p&gt;
&lt;p&gt;By going to this length we honor the food.&lt;/p&gt;
&lt;p&gt;&lt;i&gt;We choose our infusions based on the season, the availability of fresh ingredients, and the creativity of Chef Bill, the family, and the amazing inputs we get from our friends.&lt;/i&gt;&lt;/p&gt;

Sourcing from Counter Culture Coffee, we crush the Toscano espresso bean gives this truffle an immediate burst of flavor.&lt;/p&gt;

Chocolate and teas go very well together. Earl Grey brings a great black tea quality with a tasty bergamot (citrus) peak. The flavor really lingers well for an enjoyable finish.&lt;/p&gt;
&lt;p&gt;&lt;b&gt;Coconut&lt;/b&gt;&lt;br /&gt;
Smooth, creamy, and full of Coconut goodness. There is no grit or grain, we use a rich coconut milk which gives a lush full body flavor with a great finish.&lt;/p&gt;

A perfect balance of the yummy taste of pepper with a slight kick at the end.&lt;/p&gt;

An uncommon blend of one of the most widely used herbs today with the most widely loved confection, The Chocolate Truffle. Surprisingly enjoyable, trying the basil has quickly become the most popular way to first experience the process of infusion. We utilize many local gardeners for this, Rosemary Pete &amp;amp; Green Monster to name a few.&lt;/p&gt;
